Grilled Recipes - How To Make Mexican Chicken Patties

Chicken is a very popular ingredient in Mexican food and, because it is so versatile, it can be spiced up with cayenne pepper, chilies, and other piquant ingredients, or it can be cooked with citrus, garlic or other delicate flavors.

Chicken is an economical ingredient and most cooking methods suit it, including roasting, grilling, deep frying, poaching, baking, and steaming. You can also use poultry to make homemade patties, combining it with breadcrumbs, zucchini, cilantro, and other mouthwatering ingredients. Homemade patties are a hundred times better than store-bought ones and the following recipe is easy, even if you are new to making Mexican food yourself at home.

The following recipe is really delicious and you will find that the zesty, vibrant flavor of the tomato salsa really brings out the taste of these tender, moist chicken patties. You can serve these for lunch or dinner and their south of the border appeal will delight everyone.

This recipe makes eight patties and one patty is sufficient for one person. If you want a spicier result, you can add some hot sauce or minced chili peppers to the patty mix but it might be better to serve sliced jalapenos or hot sauce on the side, just in case some people want to add them and others prefer not to.

What You Need:

6 plum tomatoes3/4 teaspoon salt3 teaspoons olive oil1 teaspoon adobo sauce1 1/2 cups fresh cilantro leaves1/3 cup mayonnaise1/4 teaspoon black pepper1/3 cup dry breadcrumbs2 cups cooked, cubed chicken breast1 zucchini, in 3/4 inch cubes

How To Make Them:

Preheat the grill to moderately hot and put a double sheet of aluminum foil over the grate. Cut the tomatoes in half lengthwise and take out the cores. Put them cut side up on the grill grate and brush two teaspoons of oil over them. Sprinkle quarter of a teaspoon of salt on them and then turn them over so they are cut side down. Grill them until they are very tender. Let them cool a bit, and then peel them.

Put the cilantro in a food processor and process it until it is coarsely chopped. Set aside quarter of a cup of it for the patties. Add the adobo sauce, quarter of a teaspoon of salt and roasted tomatoes to the food processor and process until chunky. Transfer this salsa to a bowl.

Combine one and a half cups of the chicken with the zucchini in the food processor and process until the chicken is coarsely chopped. Add the mayonnaise, pepper, breadcrumbs, reserved chicken, reserved cilantro and the rest of the salt and process until the mixture is chunky.

Shape it into eight patties and grill them for five or six minutes per side or until they are done. Alternatively, you can saute them in a greased skillet for four minutes per side or until they are golden brown. Serve the patties hot with the salsa on the side.
