What Are Serrano Peppers?
Serrano Peppers are a type of chili pepper that originated from the mountainous regions of Puebla and Hidalgo which are Mexican states. In fact, the word serrano means mountain in Spanish. Mature pepper plants of this type can grow to a height between 1 ? to 5 feet tall and can hold up to 50 pepper pods. Before the peppers ripen, they are green in color.
Afterwards, they can turn different colors such as red, green, yellow, orange, and brown. This pepper is known for its intense heat. People tend to think they resemble the Jalapeno but are much hotter. These peppers can be found in different salsas and sauces. In fact, these are typically used when making pico de gallo. They are also delicious either pickled or roasted. This pepper remains to be one of the most used chilies in Mexico.
Texas Grilled Sirloin With Serrano Chile Salsa
If you order steak whenever you dine out at a Mexican restaurant, you will love this dish and enjoy making it for your friends and family. This recipe uses hickory chips to give the steak a smoky flavor. This is one steak that will not need the addition of steak sauce and is great when eating it by itself or served with the Serrano Chile Salsa recipe below. When serving, garnish with fresh rosemary sprigs and lime slices. This recipe yields 4 mouthwatering servings.
What You Need:
Hickory chips1 pound lean boneless top sirloin steak, trimmed? cup lime juice2 tablespoons chopped fresh or 2 tablespoons dried oregano1 tablespoon chopped fresh or 1 tablespoon dried rosemary1 to 2 teaspoons pepper1 garlic clove, pressedHow To Make It:Soak hickory chips in water at least 30 minutes.
Combine steak, lime juice, oregano, rosemary, pepper, and garlic in a large heavy-duty plastic bag; seal and shake well. Chill at least 8 hours, turning occasionally.
Remove steak from marinade, discarding marinade. Using the hickory chips in your grill, grill steak, covered with grill lid, over medium-high heat, 350 degrees to 400 degrees, for 5 to 6 minutes on each side or to desired degree of doneness. Cut diagonally across the grain into thin slices.
Serve as desired.
Serrano Chili Salsa
This recipe makes 2 cups of salsa. It goes great served beside Texas Grilled Sirloin. If you like a milder salsa, only use 2 or 3 Serrano chili peppers.
What You Need:
6 Serrano chili peppers, diced1 pound plum tomatoes, diced2 tablespoons diced purple onion? cup orange juice2 tablespoons diced yellow or red bell pepper2 tablespoons minced fresh cilantro1 tablespoon rice vinegar? teaspoon salt? teaspoon sugarHow To Make It:Combine all ingredients. Cover and chill for 1 hour.
