Tips for Grilling a Perfect Steak in the Backyard

A perfect grilled steak starts long before the coals get hot. The most crucial first step could be completely out of your control, that is, if you don't make the food buying choices. The quality of beef is based on the marbling of fat. Prime is the best quality. Using prime cuts does not ensure success but this grade of beef will give you the best opportunity to grill that perfect steak. The next grades are choice and select. Choice beef is fine cut and could provide you a nice meal. This is the most widely served. Select should be left to stews and casserole where seasoning can be used to enhance the flavor.

Farm raised beef can provide the best taste and tenderness. Talk to a local processor or butcher to get recommendations of farms near you. Cattle that are grass fed and raised through traditional genetics, feed and processing will yield the best quality. Cattle farmed locally are traditionally raised with no antibiotics, hormones or steroids. Prior to packaging all meats are inspected for wholesomeness by a USDA certified processor so you have no worries on freshness. This is not to say a good cut of beef can't be found at a local supermarket. Many stores still have butchers on staff and sell choice and prime qualities. They may even purchase from a local cattleman. Do some research in your area. Once you find a good source you'll be taking the first step to grilling the perfect steak.

Take the chill off. A steak at room temperature will soak in your seasonings better and will cook faster and more evenly. Twenty minutes resting after removing the beef from the fridge will suffice. This will give you time to heat up the grill and choose a beverage to enjoy while grilling.

Season your steaks about ten minutes before you place them on the grill. This will give time for the flavor to soak into the meat and prevent it from coming off on to the grill. Now about the seasoning. You have taken time to research the best place to purchase your prime cut of beef. You may have even drove out to the country side to a local cattle farm for your prize dinner entree`. Do not over season a Prime cut of beef a little bit of good salt is all that it needs. Add a dash or two of Cajun spice to take it up a notch but be sure to let the flavor of the beef shine. Heavy seasoning and thick sauces should be left to the select group of beef.

Some prefer charcoal, some prefer propane. I think either are fine. Propane is much more controllable and will allow you the most consistent grill time after time. The important part is heat. You want to bring the temperatures up into the 425 degree range. This will get a nice sear and seal in the juices.

Take a step back! After placing the cut onto the grill don't play with it. This is probably the biggest mistakes a home cook can make. We all want to keep checking the food, flipping it and moving it around. Leave it alone. Determine the time needed based on the thickness and wellness you'd like to achieve. You could find a chart to give you a basis but this is really a learned ability that will improve the more steaks you grill. Flip it once and give it a quarter turn once on each side. And above all do not press it into the grill with your spatula. This removes the juices from the beef and degrades the flavor.

Don't under estimate the visual appeal. The quarter turn is used to make the cross hatched grill marks. Done correctly your finished grilled steak will have that magazine photo appeal. This is probably not the most important thing, however, the visual will add to the enjoyment before the first bite.

A perfectly prepared steak is within anyone's reach by following these simple tips. Start out with the best quality of beef from your local area, add to that some light side dishes (grilled asparagus is my favorite ) and a cold beverage of choice. Take time too prepare and grill your choice or prime cut and be sure to eat slow and savor the depth of flavor.

Three Best Crockpot Recipes

What dinner meal takes normally fifteen minutes to prepare but tastes delicious? A meal made in a slow cooker of course. If you really want to save time but still make a great dinner for your family, then take a few minutes in the morning to get the ingredients ready, toss them into the cooker and go.

There are tons of good recipes available now days, but how do you know which are the best crockpot recipes? Should you select chicken or beef, soup or stew, spaghetti or pizza?

We've taken some of the guess work out of it all and provided a few of the best crockpot recipes (in our opinion anyway.)

Easy Crockpot Beef Stew

6 large potatoes, peeled and cut into pieces
6 large carrots, peeled and cut in 1 1/2 inches
3 lbs of beef stew meat
1/3 cup soy sauce
1 tsp paprika
1/2 tsp. pepper
3 Tbsp of flour
1-12 oz bag of onions
1 cup condensed beef broth
1 8 oz. can tomato sauce
1 tsp. salt

Layer potatoes, then carrots on the bottom of the slow cooker, line top with beef. Sprinkle with soy sauce, salt, pepper, and flour. Mix the beef broth and tomato sauce and pour over everything and cook on high setting for 5-7 hours.

Tortilla Chicken

1 doz. corn tortillas
3 cans cream of mushroom soup or cream of celery soup
1 (8oz) pkg. Jack cheese, grated
1 (8oz) pkg. Cheddar cheese, grated
2 cans (4oz each) chopped chiles
1 boiled de-boned chicken (3 to 4 cups chopped)
1/2 med. onion, diced

Layer in a slow cooker the soup, tortillas, cheese, chicken, chiles, onion, soup; repeat using all of the ingredients. Cook on low setting for 6-7 hours.

Spaghetti Slow Cooker Recipe

2 lbs. ground chuck, browned and drained
1 cup chopped onion
2 cloves garlic, minced
2 cans (15 ounces each) tomato sauce
2 to 3 tsp. Italian seasoning
2 cans (4 ounces each) sliced mushrooms, drained
6 cups tomato juice
1 package (16 ounces) dry spaghetti, broken into 4 to 5- inch pieces

Mix all ingredients, except dry spaghetti, in slow cooker. Stir well. Cook on low 6-8 hours or high 3-5 hours. If cooking on low setting, turn to high during last hour and add dry spaghetti.

How to Make It:

In a medium saucepan, heat the run on medium high. Allow to boil for a minute. After it boils slowly for a minute, add in the brown sugar, water, lemon juice, and butter. Let the mixture come back to a boil, whisking the entire time. Reduce heat and let mix simmer for about five minutes. Remove from heat and let the mixture cool.

Heat your grill to medium heat. Oil the grates with a bit of canola oil. Take pears and put on the grill with the cut sides on the grates. Allow to grill for about 8-10 minutes. When pears are tender, remove carefully from the grill. Glaze pears with the cooled rum glaze and serve immediately. Top with ice cream or whipped cream.

Grilled Potatoes - How to Make Wonderful BBQ Potatoes on Your Grill

Ah, the potato. No meat, no vegetable can compete with the sheer versatility of the potato. Use it in a stew, as fries, mashed with butter and served as a side with a steak - the humble potato has many uses, all of which it fulfills wonderfully. No wonder it is the 4th most cultivated crop on the planet after rice, wheat and corn!

Potatoes are often the centerpiece of a vegetarian fare, and the perfect side dish for a barbecue loving carnivore. They make wonderful snacks, but also have the flavor and versatility to carry an entire meal on their own. You can prepare them howsoever you like, but one great way to cook them is by barbecuing them. BBQ potatoes have a special flavor that makes them a major hit when paired with steaks, sausages, burgers and ribs.

The first step to cooking a baked potato on a BBQ grill is proper selection. When picking potatoes, make sure that you pick only the ones with smooth skin - make sure that there are no knots, lesions or dark spots on the surface. The potato should be firm when pressed and should be no bigger than your palm. The ideal size would be around 3/4th of the palm.

Make sure that you pick potatoes of similar size. This would ensure that they all get cooked evenly. Larger potatoes take longer to cook than smaller ones, and large variations in size can lead to a dish that is overcooked in some parts, undercooked in others. In fact, this is a good practice when buying any vegetable - pick clean, firm, even sized veggies only.

If you do grill them whole, make sure to stab them a few times with a fork - this allows the steam to escape.

To bake potatoes, you need to wrap each one individually in tin foil. Make sure that the tin foil is large enough to wrap a potato completely - this will help in keeping it moist and juicy. But before you start wrapping the potatoes up, you need to season them.

The kind of seasoning you'll use will depend largely on the main dish. One very good seasoning is a bit of salt, a dash of pepper, a few herbs - parsley and rosemary are my favorite ones - some butter and to top it off, a bit of olive oil. Cover the potatoes in the seasoning mix and wrap each one individually with the tin foil. Preheat the grill to a moderate heat and place the potatoes on it. Make sure to keep them away from direct heat.

Keep them on for about an hour or so. Don't open the lid too often - this will lend the potatoes a smoky flavor and make the skin crispier. After an hour or so, use a fork to see if they are done - you should be able to sink your fork all the way through.

Serve with melted butter and garnish with your choice of herbs. BBQ potatoes work wonderfully well with any kind of meat and are highly underrated.

When summertime rolls around, corn is a plentiful vegetable that is a great side for many meals. One of the best ways to prepare corn on the cob for the perfect taste of summer is to cook it out on the grill. It is easy and fast to grill ears of corn and while it is easy, the flavor is sure to impress. You will find that you can grill this vegetable in several different ways. Here are a few different options for grilling ears for a wonderful side dish.

Grilling While Still in the Husk

One of the tastiest ways that you can grill corn on the cob is inside the husk. To get started, peel off some of the outer layers of husk, leaving several layers to keep the ears protected. Then you will need to put the whole cobs into a sink or pot full of cold water and allow to soak for about 15-20 minutes, ensuring that they are totally covered by the water. This helps to add moisture while cooking and also keeps the husks from catching on fire.

As you are soaking the cobs, preheat your grill to medium. Once the soaking is complete, remove the cobs and shake them off to remove water. Pull the husks back gently and only remove the silk. The kernels should be brushed with some butter or olive oil. You can add some seasonings before you rewrap the cobs in the husks. Good examples include black pepper, onion, garlic, salt, and other herbs.

Now you are ready to put the ears on the grill. Start by putting them on the bottom rack for several minutes, turning to keep charring from happening. Then, they should be placed on the top rack. Allow them to cook for another 15-20 minutes on the top rack. Once you remove the cobs, peel the husks away from the skin, make sure all the silk is removed, and serve with some butter.

Aluminum Foil Grilled Corn

Another option you have for grilling corn on the cob is grilling it in aluminum foil. To cook ears this way, peel away the husks, removing the husks and the silk. You will want to soak the whole cobs for about 20 minutes in cool water, which adds moisture to the corn. Then wrap them up in the aluminum foil, brushing with a bit of olive oil and adding seasonings. Roll up in the foil and ensure foil is completely closed around the corn so steaming can occur.

While you are grilling other food, place the aluminum foil wrapped cobs on the top rack of the grill, closing the grill to keep in the meat. Ensure you rotate the corn on a regular basis, allowing to cook for about 20-30 minutes on the top rack. Wear oven mitts to take the food off the grill and carefully unwrap the foil. Serve while hot.

Indian Style Grilling - The Mysteries of Tandoori Chicken

What exactly is "Indian style grilling"? Is there any fundamental difference between the ways Indians and Americans grill their meat?

To find the answer to these questions, one will have to travel across the globe to India itself. If you were to land in New Delhi tomorrow and take a walk through its crowded streets, one common sight that will greet you is a string of chicken pieces strung outside street-side restaurants in a fiery red marinate. A man, usually not particularly concerned about hygiene, in a dirty undershirt, stoops over a burning hot clay oven. The chicken pieces, skewered and brushed with butter or ghee (clarified butter), disappear inside this oven for a few minutes. They are taken out, turned, brushed with some more butter, and again they disappear into the oven. Five more minutes later, the cook in the dirty undershirt takes out the chicken pieces, plops them on to a plate, sprinkles some spice mixture on them, squeezes some lemon juice on top and presents it to you, steaming hot and terribly delicious.

The clay oven in question is called a 'tandoor'. The chicken dish is called 'tandoori chicken'. The spice mixture is called 'masala'. This dish - 'tandoori chicken' - is often called the national dish of India. It is ubiquitous throughout the northern parts of this country. Hundreds of restaurants in every city serve out thousands of plates of this spicy grilled chicken dish. The same chicken is used in another national favorite - 'Butter Chicken', a dish of grilled chicken pieces in a flavorful sauce of tomatoes and cream.

The 'tandoor' is very different from grills used in the Western world. For one, the food is not kept out in the open. Rather, this clay oven is at least 3-4 feet high. The coal is burnt at the bottom. The food is placed skewered, then placed deep inside the oven. It is periodically turned to evenly distribute the heat. The end result is meat that is thoroughly cooked but doesn't quite come off the bone. The cooking time is hardly more than fifteen minutes.

The marinate mixture used for the most popular dish - tandoori chicken - is made primarily of yogurt. Yogurt (or curd as it is called in India) is a common base in most chicken dishes. It is spiced with red chili powder, dry 'garam masala' (a mixture of large cardamoms, cinnamon, cloves, black pepper, etc.), dry coriander powder, a hint of turmeric powder, and ginger-garlic paste. The chicken is placed in this marinate for a few hours, and then roasted inside the clay oven.

Unlike America, where grilling is a national pastime, almost nobody even owns a 'tandoor' in India. Yet, 'tandoori chicken' is a staple food item. This has made 'non-veg restaurants' (the label has to be clearly specified, seeing how India is a largely vegetarian country) mushroom throughout the country, dotting virtually every road corner. In my travels through India, I hardly came across a city or town that did not have a few dozen such restaurants, alluring locals and weary travelers alike with the aroma of perfectly roasted chicken wafting around everywhere.

What's the Difference Between a Dutch Oven and a Cooking Pot

Beef seared in bacon grease, simmered slowly in a Dutch oven with beans, carrots and potatoes has long been a staple of cowhands and modern day campers. A Dutch oven is placed over hot coals and those coals shoveled on the top of the oven. It slow cooks foods with liquids and bakes foods as well. A cooking pot cooks food rapidly or slowly when placed over the heat source.

Shape and Lids
A cooking pot doesn't have to have a lid to do its job. If it does, the lid may be glass or the same material the pot is made of. Cooking pot lids are often domed with a protruding round doorknob-shaped handle in the middle. An oven requires a tight fitting, thick lid made of the same material as the oven. The lid is flat across with a handle in the middle. The handle is made so a hook can be used to lift it off, since the lid and handle get very hot. Dutch ovens have a flat bottom with straight sides. The oven stands on legs so chunks of wood, or charcoal briquettes, have room to burn directly underneath the pot. The ovens also have a bail, a wire loop, attached to opposite sides of the pot near the top. The bail is used to carry the full hot Dutch oven off the fire. Cooking pots have handles, either one long handle or two shorter handles. The handles, in most cases, are not meant to be exposed to heat.

Materials and Shape
Cooking pots are made of various materials, or combination of materials, including aluminum, copper, stainless steel and enamel over steel. Dutch ovens are made of cast iron or aluminum. Cast iron conducts heat more evenly but aluminum is lighter. Cast iron has to be cured before using by rubbing with oil and heating while aluminum does not. Cooking pots do not have to be cured before using either.

Cleaning
Clean a Dutch oven by burning off any leftover food by turning the pot upside down over hot coals. Another method is to wash the oven with hot soapy water. Dry and then spread a thin coat of oil on the oven. Cooking pots may be scoured with steel wool, a plastic scrub sponge, soap and water or put in the dish washer. The cooking pots do not need a coat of oil.

Baking
While both ovens and cooking pots are used to cook foods, only Dutch ovens are used to successfully bake. The prime temperature for cooking in a Dutch oven is 350 F. which is the temperature often used for baking cakes and pies. Both the top and bottom of biscuits brown evenly in an oven. Cooking pots fry or steam but don't have the ability to bake. The temperature is hottest closest to the heat source which is at the bottom of the pot. A Dutch oven disperses the heat evenly throughout the interior of the oven.

How to Start a Charcoal Grill - Pros and Cons of Different Grill Starters

Charcoal grills have an entirely different flavor from gas grills. Not only is the flavor of the food much richer - the charcoal imparts a natural smokiness to the meat - but it also lends a certain old-timey feel to the entire experience of grilling. Truly, for any BBQ enthusiast, nothing can beat a summer evening spent with a charcoal BBQ grill, the company of friends and family, and a favorite drink.

At the same time, I'm under no delusions: charcoal grills aren't meant for newbies. If you are new to grilling, you are better off working with a gas grill. Even something as simple as controlling the temperature of the grill can take months to years of trial and error before you get the hang of it. It's because of this reason that gas grills have become so common these days. But charcoal imparts its own flavor to the meat which gas simply can't match, and I daresay that despite the steep learning curve, any BBQ enthusiast should try his hand at working with a charcoal grill.

The basics first: how to actually start a charcoal grill? Unlike gas BBQ which needs just a turning of the knob, charcoal requires some sort of starter to get going. Your choice of starter will vary depending on what's available, as well as what you are comfortable with.

Traditionally, the starter of choice has been lighter fluid. It's nothing special, just the ordinary lighter fluid that you would put in your Zippos. Start off by building a flat topped pyramid of the charcoal then dousing the top with lighter fluid for a few seconds (a maximum of 5 seconds). Next, light up the charcoal with a long fireplace matchstick (or if you are feeling macho, a long piece of wood). The charcoal will immediately set on fire.

Charcoal requires oxygen to remain ignited. At the same time, a fledgling fire needs to be protected from the wind. More often than not, the fault may lie with your choice of starter itself - lighter fluid is notorious for being difficult to work with.

The former works on electricity and generates a tremendous amount of heat that sets the charcoal off. The latter works by placing the charcoal in a cylindrical chimney, which is then lighted by using newspapers or matchsticks. The heat is distributed throughout the charcoal pieces, making it tremendously easy to use. This method is often called the 'traditional' way of lighting charcoal.

For those new to BBQ and grilling, I recommend using a chimney starter. It can make short work of getting the grill started and is ideal for newbies as well as experienced users. Lighter fluid, while more popular, has a lot of shortcomings as a starter and I would advise you against using it.

Cooking for one or two people is not much of a challenge for fans of authentic Mexican food recipes, but what about cooking for ten or twelve people? The following stuffed pork recipe is one of the best reasons to fire up your grill.

This amazing dish cooks to perfection on there and, if you make this, you will have enough food for twelve people. You can double the recipe for a larger group but you will need double the ingredients (and a bigger grill!)

When the weather is good and you feel like inviting some friends over, the smell of a pork tenderloin cooking on your grill is sure to make their mouths water in anticipation. This recipe is really flavorful and all the ingredients, even though there are quite a lot of different ones, are easy to obtain.

What You Need:

2 1/4 lbs pork tenderloin1 1/2 teaspoons ground cinnamon4 teaspoons hot chili powder4 teaspoons ground cumin4 cloves smashed garlic4 teaspoons crushed coriander seedsSalt and black pepper, to taste3/4 cup chopped white onions3/4 cup diced mushrooms1 1/2 cups finely chopped carrots3 tablespoons olive oil3/4 cup chopped celery3/4 cup cooked barley6 oz white wine6 tablespoons red bell pepper1 oz cooked brown rice3/4 cup cooked lentils (brown or green)3/4 cup chopped leeks3/4 cup finely chopped tomatoes3/4 cup grated cheese6 shredded romaine leaves8 tortillas (red chili or jalapeno variety)3 cups stock2 zucchini, thinly sliced on the diagonal3/4 cup cooked black turtle beans1 1/2 teaspoons tomato pasteFresh thyme, for garnish (optional)

How To Make It:

Combine the cinnamon, chili powder, cumin, garlic, coriander, salt and black pepper to make a spice mixture. Rub half of it over the pork and let it marinate for two hours at room temperature or for up to twelve hours in the refrigerator.

Heat the oil and saute the onions, leeks, carrots, mushrooms and celery with all but about three tablespoons each of bell pepper and tomatoes for five minutes over a moderate heat. Stir the mixture often.

Add the remaining spice mixture, rice, wine, lentils, tomato paste, beans and barley and stir. Pour in the stock and simmer the mixture until it is creamy and thick and the liquid has been absorbed. If you like, you can make this filling up to forty eight hours ahead and reheat it.

Grill the pork over a high heat, turning it often. Sprinkle some salt and black pepper over it and cook until medium rare. Cover the meat with aluminum foil and let it rest. Grill the zucchini until it is quite tender but still with a bit of bite to it.

Warm the tortillas on the grill. Put the tortillas on a flat surface and divide the cooked vegetable and bean mixture between them. Cut the ends off the pork and cut them into thin slices. Layer these pieces of meat over the filling and top with cheese and romaine.

Tightly wrap the tortillas and cut them in half. Cut the rest of the meat into thin diagonal slices. Arrange the pork, zucchini, and filled tortillas on a platter and garnish with the remaining bell pepper, tomato and some fresh thyme. Let people serve themselves.

Grilling Steaks - Tips to Master Perfection

Mmmm, I can taste it right now. Grilling the perfect steak is not difficult nor time-consuming. Grilling steaks can be done year-round, and I can attest that; even if it is 10 degrees below zero outside, I'm grilling. The aroma and taste of grilled steak is so worth it.

The following are both gas grilling steak tips and charcoal grilled steak tips on grilling the perfect steak. Also, gas grilling temperatures and charcoal grilling temperatures are for medium high heat.

One of my first tips, begins with your meat choices.

What is the best steak for grilling? I love grilling rib-eye steaks, and instead of buying the large 16 oz cut - purchase the 8 oz sized steak. If you find these beauties on sale, buy larger quantities of your favorite high quality meat and load up that freezer to save money.

I have found Chuck Roast Steaks available at the grocery store and are very reasonable in price and grill up beautifully. If you cannot find this cut of steak, ask the meat department to cut you some.

With the several cuts of beef available today, there is a trade-off between the taste of the meat and the tenderness. Following are more tips on grilling the perfect steak. Generally speaking, the more tender the meat - the less flavor it has. Following are more tips on grilling the perfect steak.

Fillet Mignon, Porter-house, T-bone and New York Strip steaks come from the loin, and you are charged more money for the tenderness. Flank steak and Top Sirloin can be tender if marinated and sliced properly when serving. When cutting your steak, hold the knife at a 45 degree angle and cut against the grain. The steak will be very tough if you were to cut with it.

Tougher cuts such as Tri-tip, Flank Steak, London Broil, Skirt Steak and Beef Ribs come from a very lean part of the steer which is a well used leg muscle. You are better off by making one of my homemade recipes for good steak marinade or investing in a meat tenderizer. It will more than pay for itself in the long run.

Avoid overcooking these tougher cuts. They are not as forgiving when served medium-well to well-done, because they don't have a tremendous amount of fat to keep them moist. Grilling time should not be long and the coals will not be as hot as you would grill a strip steak or ribeye. You want to cook it a little bit more gently so you are not pushing out the juice so much. So keep it in the medium to medium-rare stage, and you will be delighted with the results.

Kabob Grilling Tips: Sirloin steak works beautifully for grilling kabobs because the meat is an even, dense cut and easy to cube. The flat surface sears much better on the grill. When grilling vegetable with the kebabs, make certain they are not cut too big. When you place the skewer down on the grill the steak must touch the grate.

Here's another one of my tips on grilling techniques: Your steak should be at room temperature before grilling. This is huge and very important when you are grilling the perfect steak. Your steak will not be ruined (you know they sell aged beef) and the flavor is outstanding. I give the steaks a good hour to reach room temperature, and if they are a thicker cut - 2 to 2-1/2 hours. Trust me on this.

Below are more of my tips: Grilling time for steak will vary due to how you want it cooked. Below are the lower and higher range temperature your steak should read when done to your liking.

Rare is 125 to 130 degrees
Medium-Rare is 130 to 140 degrees
Medium is 140 to 150 degrees
Well-Done is 160 to 170 degrees

How To Make Them:

Preheat the grill to moderately hot and put a double sheet of aluminum foil over the grate. Cut the tomatoes in half lengthwise and take out the cores. Put them cut side up on the grill grate and brush two teaspoons of oil over them. Sprinkle quarter of a teaspoon of salt on them and then turn them over so they are cut side down. Grill them until they are very tender. Let them cool a bit, and then peel them.

Put the cilantro in a food processor and process it until it is coarsely chopped. Set aside quarter of a cup of it for the patties. Add the adobo sauce, quarter of a teaspoon of salt and roasted tomatoes to the food processor and process until chunky. Transfer this salsa to a bowl.

Combine one and a half cups of the chicken with the zucchini in the food processor and process until the chicken is coarsely chopped. Add the mayonnaise, pepper, breadcrumbs, reserved chicken, reserved cilantro and the rest of the salt and process until the mixture is chunky.

Shape it into eight patties and grill them for five or six minutes per side or until they are done. Alternatively, you can saute them in a greased skillet for four minutes per side or until they are golden brown. Serve the patties hot with the salsa on the side.

Not For The Weak-Of-Heart Burger

This burger (what a weak word for a feast from the gods) has been jokingly referred to as a heart attack on a bun. Seriously, though, if you or a loved one does have cardiovascular issues, this might not be the recipe for you.

To all who remain, take two aspirin. You are going to feel your arteries become sluggish as you read the ingredients and instructions.

Chips and salsa or fresh vegetables would be a good appetizer for this meal. Avoid any dips or sauces, as the fat content of the main course is already going to knock everybody off their allocated fat consumption for the day. Make that week. Possibly month.

What You Will Need (for the burger only):

1 ? pounds of ground beef (Lean not recommended. Shocking.)8 slices bread (12 grain works amazingly)8 slices cheese (your preference, generally American)6 T butter (reserve 2 T butter)1 large onion

This burger involves a fair amount of leeway on the ingredients. Wheat, white, 12 grain; the choice is yours. The same is true of the cheese. The onion can be either chopped or sliced. As you can see, no seasonings of any kind were mentioned. Worcestershire is an excellent addition, making the beefy taste of the burger much more robust. Some cooks might choose to add garlic in some form.

This recipe is allegedly for two people. Four grilled cheese sandwiches, 1.5 pounds of beef - two people. If you have more people, double or triple the recipe, or just cut individual servings in half or even quarters for the smaller appetites of the house.

How To Make It:

Lightly oil your grill grate before preheating to medium-high.

Divide the beef in half, then flatten and form into patties. Grill for 8-10 minutes per side (dependent on personal taste).

As the burgers grill, melt the ? stick butter (4 T butter) in a skillet and assemble four cheese sandwiches. Pan fry the sandwiches to golden brown, and set aside.

In the same skillet, melt the rest of the butter (2 T butter), and add the onions. They will take roughly 8-10 minutes to cook, so start them when the burgers are roughly halfway done.

Put a grilled cheese sandwich on each plate and top with a burger patty. Cover with onions and the remaining grilled cheese sandwich, and serve. The Pros And Cons Of Charcoal Smoking

Unless you are an absolute purist and want to use hardwood as the heat source for your smoker then charcoal is probably the next best thing.

For sure hardwood has been used for eons as a source of both heat and smoke but in this modern day and age is it practical? If you're into continually loving and caring for your fire all the way through the cookout and you've got the ability and finances to build a smoke pit in your backyard then maybe I'm barking up the wrong tree but certainly as far as I'm concerned if you want to get close to the traditional method (and like me you like playing with fires) then plump for a charcoal smoker.

Assuming you buy good quality charcoal then you will get a product which is upwards of 80% pure carbon and this ensures that you get a clean burn. Just be wary of some of the cheaper products that have additives, some of these may be petroleum based and therefore could end up tainting the flavor of your food.

The main advantage of using charcoal other than the fun is that it is completely self contained. There's no need for pipes (gas) or power cords (electricity), once your charcoal is lit the only thing it needs to continue burning is a ready supply of oxygen which is freely available in the air we breathe. So if portability is high on your list of criteria when buying a smoker then maybe a charcoal burner is right for you - just don't go out and buy a ceramic kamado like the Big Green Egg because these weigh a ton.

There are however a number of disadvantages to charcoal and this mainly revolves around the control of the heat. Dependent on the supply of oxygen, charcoal can produce a very intense heat and if that supply of oxygen is abundant then this intense heat will only last for a short space of time.

For this reason, careful control of your fire is required to ensure that you get an even heat for as long a period as possible. After all, we're not heating the oven to a very high temperature so getting the charcoal to burn low and slow is possible by restricting the supply of oxygen.

Draft vents top and bottom help you achieve this and once sorted you can relax a little but getting the fire under control will involve a lot of sequential incremental adjustments to the apertures of both vents. Some smoker enthusiasts consider this to be part of the fun, if you don't fancy it then go for gas or electricity.

Once set up it's also the case with charcoal that your fire can start to die within 30 minutes or so and this means that you have to keep checking your smoker on the half hour throughout the cooking process. (Professional competition teams generally have an alarm that will sound should the temperature inside the oven vary by so many degrees from the optimum).
